Beef and Red Wine Casserole

Casserole with a citrus twist! Submitted by zoe.

1 onion
2 cloves of garlic
1kg steak, oyster blade
1 x 400g can of tomatoes
½ bottle of red wine
Parsley, chopped
1 orange peel, chopped finely
1 bay leaf
3 tbsp flour
salt and pepper
0.5kg button mushrooms
2 tbsp of butter
2 tbsp of Olive Oil

1). In a large saucepan brown the meat in hot oil.
2). Remove the meat from the saucepan and drain fat.
3). Fry the onion and garlic until soft.
4). Put the meat back in and sprinkle with flour (cornflour would do, but use a little less).
