Algerian Wheat Soup

2 tbsp olive oil
1 onion, chopped
4 garlic cloves, chopped
1 tsp paprika
pinch of cayenne pepper
125ml tomato puree
1l vegetable stock
50g bulgur wheat
1 tbsp chopped parsley
1 tbsp chopped coriander leaves
1 tbsp chopped mint
50g canned chickpeas
1-2 tbsp lemon juice
salt and pepper

1) heat the oil in a large saucepan and saute the onions until softened, stir in the garlic, paprika and cayenne. Cook for 2 minutes, stirring continuously.
