Baked Sweet Potato

Great for lunch, quick, easy, healthy, tasty, virtually no work! Submitted by Anom (anom) from The United Kingdom.

1 medium sweet potato, washed
1 tbsp natural low-fat organic yoghurt
1 tbsp garlic chives, finely chopped
lemon juice, A squeeze
½ tsp Hot Paprika
Freshly Ground Black Pepper

1) Prick the sweet potato all over with a fork, and place in a microwave for 7-9 mins depending on power and size of potato. If you have the time, place in a pre-heated oven at 150°C for 1 hour with a further 15 mins at 200°C.
